We are digging back into the depths of my childhood again this week to bring out a dish that I have eaten countless times over the years, and still enjoy to this day.
Wicker’s Chicken is a dish that my family would make because it was cheap and relatively easy to make.
For those of you who do not know what Wicker’s is, allow me to explain. Wicker’s is a barbeque marinade that can be found in most grocery stores, I believe Kroger is included on that list as well.
It is a thin liquid and it has a very tangy flavor. However, once it is cooked down, it evens out.
I love the flavor it gives to chicken and I always have. It is a more savory flavor with just a hint of sour to go along with it.
The company boasts that it is also good on pork and fish, but I have never tried it on anything but chicken so I cannot confirm that claim.
I do not remember when we first started making the dish, but I would venture to say it was the early 2000’s, or at least that is the earliest recollection I have of it.
Regardless, I enjoy it very much and have evolved to making it for myself now.
The process is easy, you simply chunk the chicken and cook it down in the marinade on the stovetop.
The amount of marinade you add will also determine the strength of the flavor. More equals stronger flavors.
This dish also pairs well with the air fryer home fries I wrote about last week.
All in all, it is a dish I would recommend for anyone who is a fan of savory chicken with just a bit of a kick.
WICKER’S CHICKEN
1 pound boneless chicken
¾ cup Wicker’s marinade
■ Chop the chicken into small chunks.
■ Place the chicken into a skillet and pour in the marinade.
■ Put a lid on the pan and cook over medium heat, stirring every couple of minutes, until chicken is done and most of the liquid is absorbed.
■ Place in a bowl, let cool and enjoy!
