I know it may be a point of contention for some Columbus residents, but I don’t think the town could ever have too many Mexican restaurants. It is my favorite genre of food, after all.
With that said, Sol Y Luna Mexican Grill opened Aug. 30 in the former Logan’s Roadhouse building at 589 18th Ave. N.
I tried to contact owner Felipe Hernandez to speak on the opening, but I suppose he was too busy making sure the restaurant runs as smoothly as possible.
However, I looked at the new restaurant’s menu and can happily say I cannot wait to try the chicken tacos.
Restaurant hours are Monday through Sunday from 11 a.m. to 9 p.m.
But Columbus isn’t the only town moving and grooving with new business.
In West Point, Artie Sutherland, owner of TBT Butcher Shop, will soon expand into the former Hoover’s Bakery at 58 Hwy. 45 N.
Starkville store manager Michael Jamison told me the company started looking for a space in West Point earlier this year and found a perfect fit in the former bakery.
“We have had a lot of our customers come from West Point, and an opportunity arose to get a building over there,” Jamison said.
Jamison said renovations to the space began in July, and his team is now replacing floor tiles and improving the kitchen before turning that opening sign on. The new location is slated to open in October.
“We are excited to get started,” he said. “There is just a lot of anticipation right now.”
Next up, it would appear the project to turn the former Kentucky Fried Chicken into a Connie’s Fried Chicken is well underway at 5490 Hwy. 45 N. Alt.
Esquire Construction Services employee Cody Hancock said the interior renovation project began in August, and crews are now working to repaint the building from a stark white to a cream yellow.
I tried contacting owner Nickle Smith to comment on when he hopes to open the restaurant, but he said he was too busy filling a rather large catering order to talk about the new location just yet. I guess we shall have to wait and see. I really can’t wait for them to open, honestly.
Finally, my friends, we move back to Columbus for one more update.
The construction project to build a new Family Dollar location at 850 Tuscaloosa Road is wrapping up this week, and electrical crews with Ideal Electric and Plumbing are putting some final touches on the building, employee Jacob Ball said.
The project to build the new location began in June, and Ball said once the building is complete, all the company has to wait on is an inspection from the city before filling shelves and opening.
“They plan on turning the whole project over by the end of this week,” Ball said.
