I know some folks who believe there are more than enough Mexican restaurants in Starkville, but if you ask me, there’s always room for one more.
With that said, El Rodeo, a Mexican restaurant at 664 Hwy. 12 W. in the Triangle Crossing Shopping Center, is now open and ready to serve some classic sizzling fajitas, among other things.
Manager Elizabeth Ornelas Pritchard told me the restaurant opened on Oct. 5 after waiting a few months for alcohol permits.
“We had a soft opening on that Wednesday with a couple private invitations for a few people,” Pritchard said. “After that was a really great success, we just kind of made the rash decision of staying open.”
Renovations to the restaurant began in 2022 and wrapped in July. Since then, Pritchard said the restaurant was waiting on the permits and a few pieces of bar and kitchen equipment while training staff.
With the business now open, I can’t wait to try the steak burrito. Business hours are Monday through Saturday from 11 a.m. to 10 p.m. and Sunday from 11 a.m. to 9 p.m.
If Mexican food just isn’t your thing, Columbus has a new breakfast option that is sure to remind you of some good old-fashioned country cooking.
Little Porky’s Restaurant, a barbeque and country cuisine restaurant at 316 Overview Drive in New Hope, will open for breakfast on Saturdays from 6:30 to 10 a.m., according to a Facebook post last week.
With the new service hours, the restaurant will feature homemade cinnamon rolls and freshly baked biscuits with bacon, sausage or even chocolate gravy, among other items.
Porky’s has been in business since 2003 and has been known for its barbeque dishes, such as BBQ pork sandwiches, steaks and fileted catfish, as well as its baked goods.
I tried to contact the restaurant for more information about the new service but never heard back. Here’s hoping everyone is hungry enough to try them out this weekend.
Elsewhere in Columbus, “Mama Justice” Missy Wigginton has opened a new law office in the former Renasant Bank building at 905 Main St.
Co-founder of MW Law Firm Jerry Wiggington said he and his wife decided to open a Columbus location earlier this year after receiving a large number of clients from the area at the firm’s headquarters in Tupelo.
“We get a lot of business from that area, and we have a couple of attorneys who live much closer to Columbus than (Tupelo),” Wiggington said. “We felt like Columbus and surrounding areas are supporting our business, so we needed to have a presence down there.”
After renovating the space this summer, Wiggington said the office opened in early October and is ready to receive clients for all personal, workplace and motor vehicle injury claims.
Moving on to West Point, the project to open a Connie’s Fried Chicken at the old Kentucky Fried Chicken, located at 5490 Hwy. 45 N. Alt. draws ever closer.
Co-owner Nickle Smith said the exterior renovation of the restaurant is now mostly complete, and construction crews are moving to completely redo the inside with kitchen upgrades and to revamp the dining area.
“I would say we are about 90% complete,” Smith said.
With the project well underway, Smith said he hopes to open the new restaurant sometime in December.
“We’re just excited to be part of the West Point community,” he said. “We’re hiring managers now and some of our key personnel.”
Finally, my friends in Caledonia, 740 Coffee Company, a brand new coffee shop, opened Friday at 737 Main St.
Store hours are Monday through Friday from 6 a.m. to 6 p.m. and Saturday from 8 a.m. to 4 p.m.
