
This week, we will take a look at a treat that is another one of my family member’s favorites.
This particular one is my dad’s favorite.
For as long as I can remember, he has loved lemon icebox pie. My mom would make it for him on special occasions as well as at random times.
He always devours these pies with such voracity that you would think they were going out of style.
Now I must admit, I have never tried one of these pies. Lemon is one flavor that I can not eat. It doesn’t matter if it’s candy, desserts, etc. I just can’t do it.
It also springs to mind a horrifying experience from a few years ago, that I can look back on and laugh now.
I was at the hospital visiting my uncle, and while in the cafeteria, I got what I thought was a slice of cheesecake. Imagine my surprise when I bit into the cheesecake and got a mouthful of lemon pie.
If I didn’t like lemon flavoring before, I really didn’t like it after.
But regardless, my dad likes this pie, so that’s all that matters.
It is relatively easy to make as well, with the longest part being the pie setting up in the, you guessed it, icebox or refrigerator.
But once it’s done setting, my dad swears by the deliciousness of the finished product. So, I believe that’s the only stamp of approval needed.
If you are a fan of lemon, I would suggest trying this pie though.
LEMON ICEBOX PIE
1- 14 ounce can sweetened condensed milk
½ cup lemon juice
1 premade graham cracker pie crust
■ Pour sweetened condensed milk and lemon juice together into a mixing bowl.
■ Using a hand mixer or whisk, blend until well combined.
■ Pour into pie crust.
■ Refrigerate for 2 hours or until set.
■ Slice and enjoy!
