
Casseroles are a great way to sneak in vegetables. This Easy Veggie Bake has a cheesy flavor that any picky eater will enjoy.
Look for California blend vegetables in the frozen section of your grocery store if you want to try a mix of broccoli, cauliflower, and carrots. If you’re interested in a different taste, you can substitute any combination of vegetables you like.
EASY VEGGIE BAKE
Ingredients
16 oz. broccoli, carrots, cauliflower, frozen
1 – 10 ¾ oz. cream of mushroom soup, 98% fat free and 50% less sodium
8 oz. cream cheese, vegetable flavored, softened
Nonstick cooking spray
½ cup croutons, seasoned
Directions
■ Preheat oven to 375 degrees fahrenheit.
■ Prepare vegetables according to package directions.
■ Drain and place in a large mixing bowl.
■ Add soup and cream cheese. Mix well.
■ Spray an 8×8 baking dish with nonstick spray. Spread mixture into the baking dish.
■ Sprinkle with croutons. Bake uncovered for about 25 minutes or until bubbly.
