I don’t like to heat up the kitchen during the hot summer months, and salads are a great option for a cool meal.
I really enjoy eating Mediterranean style food and this tasty, protein-filled salad with Greek seasoning is perfect for me.
GREEK ISLAND SALAD
Ingredients
3 tablespoons vinegar
¼ cup olive oil
1 tablespoon Greek seasoning
2 – 16-oz. cans white beans, drained
1 – 15-oz. can quartered artichoke hearts, drained
1 jar roasted red peppers, drained and diced
1 cucumber, diced
½ pint cherry tomatoes, sliced
½ red onion, diced
Directions
■ Combine vinegar, oil, and seasoning in a large bowl.
■ Add beans, artichokes, peppers, cucumber, tomatoes and onion to the bowl and stir.
■ Chill and serve.

Don’t have any Greek seasoning on hand? You can make it!
Mix together the following:
2 teaspoons garlic powder
2 teaspoons dried basil
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon pepper
1 teaspoon dried parsley
1 teaspoon dried rosemary
1 teaspoon dried dill
1 teaspoon cinnamon
½ teaspoon thyme
½ teaspoon nutmeg
